ingredient:

1 whole chicken

1 cup glutinous rice

6 dates

10 cloves of garlic

2 roots of ginseng

1 green onion

salt and pepper

1. First, cut off the tail of the chicken with the most fat, remove all the visible fat around it, and cut off the wingtips as well.

2. After washing the whole chicken, soak it in cold water for 30 minutes. This process removes blood and residues, resulting in a clean broth.

3. Soak glutinous rice in water for about 1 hour.

4. Open the belly of the chicken and add glutinous rice, dates, green onion, garlic, and ginseng. Be sure to close the chicken's jaws well.

5. Place the chicken in a large pot, cover with water, and bring to a boil over medium heat. When it starts to boil, reduce the heat to low while removing the foam.

6. Boil slowly for 1 hour 30 minutes to 2 hours. If there is less water left in between, add more water.

When the samgyetang is done boiling, season it with salt and pepper.
